ProTex is a pre-engineered UL 300 fire suppression system.
What Is UL 300? UL 300 (“Standard for Testing of Fire Extinguishing Systems for the Protection of Restaurant Cooking Surfaces”) is a safety standard created by Underwriters Laboratories in 1994 to curtail the threat posed by grease fires in commercial kitchen areas. This standard was established in response to changing trends in restaurant cooking techniques. The growing use of vegetable oils and energy-efficient cooking appliances meant that kitchen fires, when they occurred, tended to be more difficult to control than in the past. As a result, it became necessary to update standard restaurant safety equipment.
UL 300 calls on owners of commercial kitchens to install and properly maintain kitchen hood fire suppression systems that are capable of putting out grease fires. It lists a number of requirements that UL 300 fire suppression systems must comply with, such as the inclusion of automatic fuel shut-offs and manual pull stations.

Required Fire System Inspections
One Call is fully licensed and insured by the State fire Marshal (MA,NH and RI) to perform the required bi-annual fire system inspections.
If you operate a commercial kitchen, you know how important your fire suppression system is to protecting your kitchen and the people that work in it in the event of a fire. Regular inspection and maintenance as required by the 2017 Edition of the National Fire Protection Association (NFPA) 17A Standard for Wet Chemical Extinguishing Systems is critical to keep your system in good working order.
The NFPA 17A requires a full inspection of your system at least twice a year (semiannually) and after any activation.
Wet chemical fire suppression systems are extremely reliable. Given this, you might ask why you even need portable fire extinguishers. The answer is simple – any system can fail, and it’s possible for equipment that has been moved or grease spills that occur to spread a fire to an unprotected area. This is why the requirement for portable fire extinguishers in commercial kitchens remains in both the NFPA 96 and the NFPA 10 Standard for Portable Fire Extinguishers.
An ABC extinguisher Is the type of fire extinguisher most people are familiar with. This is capable of putting out three different kinds of fires:
- Class A (burning wood, cloth, paper or plastic)
- Class B (burning liquids including gasoline)
- Class C (electrical fires)
***ABC Extinguishers are not the preferred extinguisher for putting out grease fires. (See K-Class)
A Class K fire involved cooking oils or fats, and it is one of the most common types of fires in restaurants and kitchens. Therefore, having a Class K fire extinguisher, which contains a blend of potassium acetate and potassium citrate, is essential for any restaurant. This restaurant fire extinguisher sprays a mist so that the oils don’t splash and it creates a solid barrier between the extreme heat source and oxygen so that it will not be able to reignite.
This extinguisher is REQUIRED if you are using a fryolator. We recommend that every kitchen has one.
About Fire Extinguishers
Employees Should Be Trained in Use of Fire Extinguisher
It’s not enough to simply have a Class K fire extinguisher. Everyone on the restaurant’s staff, from the general manager to the newly-hired waitress should be trained on using the extinguisher. Local fire departments will often hold training sessions, and sending your employees, especially your kitchen staff, to these events could some day save your restaurant and could possibly lower your insurance rates.

Fire Extinguishers Don’t Last Forever
Most people, especially restaurant owners and managers, are aware that fire extinguishers have a shelf life and will need to be serviced within a set amount of time. Knowing when your fire extinguisher is set to expire is important, but there are also some situations that require immediate attention.
First and foremost, if it has been used, it should be serviced to ensure that it still has enough pressure and chemicals. If the nozzle or hose look worn, or if the handle is wobbly, you may have a problem. If the locking pin is missing or unsealed, or if the inspection sticker or tag is missing or incorrect, don’t wait for an inspector to find out, get it replaced or serviced immediately.

How Many Fire Extinguishers Do You Need?
We all see them and know they’re there – the fire extinguishers placed in our buildings in case a fire should strike.
But do you have enough to ensure that your building is up to code and are they strategically placed to increase the safety of those inside who may have to use them?
A basic NFPA rule is that there should be no more than 75 feet between fire extinguishers and that they should be accessible. Naturally, then, the square footage contained in a building and its layout will determine the number needed.
A K-Class however, must be within 30′ of the hood system.
